I always have a bit of trouble describing the splendor of visiting one of America's national parks - particularly to someone who hasn't been to one. No narrative can do it justice. One picture - one glimpse through the massive windshield of an RV, for instance, of a giant sequoia or a 200-foot waterfall or a pristine mountain lake - is worth a million words. I have tried to explain the vastness of the Grand Canyon, the jaw-dropping colors of Zion National Park, the majesty of Mount Rainier - all to no avail. But I have never had trouble encapsulating what I love about Wyoming's Grand Teton and Yellowstone: They are the Magic Kingdom of national parks.

Best of all, serving family favorites and watching dietary needs is a snap when your kitchen is traveling with you. And easy doesn't have to mean b-o-r-i-n-g! Got a sweet tooth? This rich, chocolaty concoction has just four ingredients so what better name than 1-2-3-4 Fudge Cake - and you can "count" on it to make you look like a dessert hero. Serve it warm with a scoop of ice cream to earn you rave reviews.
1-2-3-4 Fudge Cake Prep/Cook Time: 15/35
Prep Method: Oven
Oven Temp: 350
Ingredients
1 pkg chocolate fudge cake mix (any brand)
1 small pkg chocolate pudding (the cooking kind)
2 eggs
1 8-oz. pkg chocolate chips
Directions
On stovetop, prepare chocolate pudding according to package directions. In large mixing bowl, add chocolate fudge cake mix (any brand), pudding and eggs. Mix well. Pour into 13x9 baking pan and top with chocolate chips. Bake in 350° oven for 35 minutes.
Notes
This recipe of only four ingredients is so easy to make. If you want, serve it warm with a dollop of ice cream and warmed hot fudge on top. Cold or warm, this cake is rich and delicious.
